The buffalo was said to be introduced into Italy in the 7th century. However, references to cheese production were not recorded until the beginning of the 12th century.

At Piccolino we use an exquisite whole milk buffalo mozzarella in a number of dishes, from pizza to salads and antipasti. This fresh, stringy textured cheese, which has a porcelain-white colour, has an extremely thin rind and delicate taste. It is highly rich both in calcium and also protein.
